Vegan Butternut Squash Soup Recipe
Ingredients
- 1 medium butternut squash, peeled and cubed
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 medium carrots, chopped
- 1 medium apple, peeled and chopped (adds a natural sweetness)
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 4 cups vegetable broth
- Salt and pepper, to taste
- Fresh thyme, for garnish (optional)
Instructions
- Prepare the butternut squash: Preheat your oven to 400°F (200°C). Spread the cubed butternut squash on a baking sheet, drizzle with 1 tablespoon olive oil, and season with a little salt and pepper. Roast in the oven for 25-30 minutes, or until tender and slightly browned.
- Cook the base: While the squash roasts, heat the other tablespoon of olive oil in a large pot over medium heat. Add the diced onion and cook for 4-5 minutes, until soft. Add the minced garlic and cook for another minute.
- Add the vegetables: Add the chopped carrots and apple to the pot, stirring occasionally for about 5 minutes, until they start to soften. Stir in the cinnamon and nutmeg, and let the spices cook for about 30 seconds.
- Combine everything: Add the roasted butternut squash to the pot and pour in the vegetable broth. Stir it all together and bring to a boil. Once it’s boiling, turn down the heat to a simmer, cover the pot, and let it cook for 15-20 minutes, until all the vegetables are soft.
- Blend the soup: Use an immersion blender to blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a blender in batches (be careful with hot liquids). Blend until creamy and return to the pot.
- Season and serve: Taste the soup and add more salt and pepper if needed. Serve hot, garnished with a little fresh thyme if you like.
Tips for the Perfect Butternut Squash Soup
- Roasting the squash makes it sweeter and adds more flavor to the soup.
- Adding an apple gives the soup extra fall sweetness, but you could use a pear or even a little maple syrup instead.
- Customize the spices: You can change the amount of cinnamon and nutmeg to your taste, or add a pinch of cayenne pepper for a little heat.
Vegan Butternut Squash Soup Ideas
- Add coconut milk for extra creaminess and a hint of tropical flavor.
